At Estancia Chochoy Mallín, production is not a complement — it’s an essential part of daily life.
Each system — livestock, beekeeping, horticulture, and forestry — works together in a sustainable balance that honors the land, its rhythms, and its people.

PRODUCTION

LIVESTOCK: GENETICS, TRADITION, AND BALANCE

The estancia has preserved its ranching essence for generations, devoted to breeding Hereford cattle. Certified genetics are used, selecting cows and heifers for rearing, while pasture-raised calves are sold for fattening in nearby fields.

In addition, goats and sheep are raised for the lodge’s own use, within a closed-cycle system that ensures traceability, animal welfare, and superior quality.
Transhumance, an ancestral Patagonian practice, remains alive: livestock move between high summer pastures and the valley’s winter grazing lands, preserving soil balance and biodiversity.

In certain areas, paddocks are leased to neighboring producers, strengthening a collaborative network of responsible production.

PRODUCTION

BEEKEEPING: THE GOLD OF THE VALLEY

The Candia Family, local beekeepers, care for more than 300 hives in the mallines (wetlands) of the estancia. Their honey, sold under the name Miel Rocío, reflects the purity of the environment and the floral aroma of the highland valley.

Each season, part of this production is donated to rural schools in the area — a gesture of connection and reciprocity with the community. The rest is jarred and offered in the lodge’s Gift Shop, allowing visitors to take a fragment of the landscape home with them.

Apicultura: el oro del valle

La Familia Candia, apicultores locales, cuida más de 300 colmenas en los mallines de la estancia. Su miel, comercializada como Miel Rocío, refleja la pureza del entorno y el aroma floral del valle de altura.

Cada temporada, parte de esta producción se dona a las escuelas rurales de la zona como gesto de vínculo y reciprocidad con la comunidad. El resto se envasa y se ofrece en el Gift Shop del lodge, permitiendo a los visitantes llevarse un fragmento del paisaje consigo.

BIODYNAMIC GARDEN: THE PERFECT CYCLE

Designed according to the principles of biodynamic agriculture, the garden at Estancia Chochoy Mallín is laid out in the shape of a sun, oriented from east to west.
Each growing bed follows the lunar calendar and the land’s natural rhythms, using selected organic seeds and traditional cultivation methods.

Everything produced there is intended for the lodge’s kitchen, ensuring freshness, flavor, and alignment with the zero-kilometer philosophy that defines its gastronomic proposal.

PRODUCTION

FORESTRY PROJECT: GUARDIANS OF THE LANDSCAPE

The estancia’s forestry program covers more than 650 hectares of growing pine trees, with a planned production that reaches a final harvest of approximately 350 trees per hectare.

The goal is not intensive exploitation, but sustainable management: producing timber for the lodge’s own construction needs while protecting native forests from fires through natural firebreaks and ongoing maintenance.
